Colombian-born Juan Quintero has an impressive cosmopolitan background, having studied alongside Michelin-star chefs like Massimo Bottura and Juan Mari Arzak. He is currently the Executive Chef at Borgo San Felice and leads the kitchen teams at both Poggio Rosso and Osteria del Grigio supported by the attentive supervision of multi-starred Chef Enrico Bartolini.
Chef Juan arrived at Poggio Rosso in 2019 with very clear ideas: to make the dining experience a thoroughly enjoyable moment for his guests, introducing them to the local territory through the tastes and authenticity of the ingredients and providing a refined and international version of Tuscan cuisine.
